HOW TO:

“fast and high” is your mantra for cooking a cut of beef at home: caramelized and crusty on the outside and moist, medium-rare-ish on the inside.

1. take a 2-inch-thick,4 well-marbled rib eye, filet mignon, t-bone or new york strip out of the refrigerator roughly an hour before you want to serve it and immediately season it liberally with kosher salt and freshly cracked black pepper.

2. place a 10-inch stainless-steel or cast-iron pan on your burner.

3. turn up the heat to high and add 1 tablespoon of oil.

4. once the oil is shimmery and rippling, put the steak in and cook for about 1 minute, then reduce the heat to medium-high and cook for a minute more.

5. flip your steak with tongs, turn the temperature up to high and cook for a minute more.

6. transfer the steak to a platter and let rest for 5 to 10 minutes.

7. serve!

4 this might seem like a lot of beef, but it’s actually better to cook one large steak for two people than to cook two smaller steaks.
